Strawberry Recipe Book

Strawberry Squares

You will need:

1 1/2 cups sweetened strawberries

2/3 cup sugar

2 egg whites

1 large container Cool Whip

1 package Pecan Sandies

 

1. Beat egg whites and sugar for 10 minutes (no less).

2. Add strawberries and fold in Cool Whip.

3. Crush Pecan Sandies and use for crust, save a few to sprinkle

    over top of dessert.

4. Pour strawberry mixture into pan, sprinkle remaining crushed

    Sandies over top and freeze.

 

Strawberry Layer Dessert

You will need:

1 cup graham cracker crumbs

1 Tbsp. Sugar

1/4 cup margarine, melted

1 cup fresh strawberries

1- 3 ounce package strawberry Jello

1 cup boiling water

1/2 lb. marshmallows

1/2 cup milk

1 cup whipping cream or 2 packages Dream Whip, whipped

 

1. Mix crumbs, sugar and margarine. Press in bottom of 9x9x2

    pan. Chill.

2. Sprinkle 2 Tbsp. sugar over fresh strawberries and let stand

    about 1/2 hour.

3. Dissolve Jello in boiling water. Drain berries, reserve juice and

   add enough water to make 1 cup of liquid, add to Jello mixture.

   Chill until partially set.

4. Combine marshmallows and milk, heat until melted. Cool ,

    then fold in whipped cream.

5. Add berries to Jello, then layer marshmallow mix, strawberry

   mix and repeat layers, ending with strawberry layer on top.

6. Chill 2-3 hours before serving.

Strawberry Breakfast Sauce

(pancake and waffle syrup)

You will need:

1 cup sugar

1/4 cup cornstarch

1/2 cup orange juice

6 cups sliced fresh strawberries

8-10 drops red food coloring, (optional)

 

1. In a saucepan, combine the sugar and cornstarch. Stir in

   orange juice, bring to boil over medium heat

2. Add strawberries, return to boil.

3. Cook and stir for 2 minutes and add food coloring if desired.

Yields 3 1/2 cups.

Fresh Strawberry Pie

You will need:

1 - 9" baked pastry shell

1 1/4 cup sugar

1 Tbsp. cornstarch

1 1/2 cup water

3 Tbsp. Realemon juice

1 small package strawberry gelatin

1 quart fresh cleaned, hulled strawberries

 

1. In medium sauce pan, combine sugar, cornstarch, lemon juice

   and water. Bring to a boil, reduce heat, cook and stir until mix

   is slightly thick and clear- about 4-5 minutes.

2. Add gelatin to mixture and stir until dissolved. Cool to room

   temperature.

3. Stir fresh strawberries into mixture and turn into pie shell.

4. Chill 4 hours before serving.
